About the Recipe

The weeknight dinner my family always requests! Sheet pan beef kebabs, roasted vegetables and fluffy white rice. Easy to make, and everyone leaves the table happy!

I love using a sheet pan with an elevated wire rack so the vegetables roast right above the kebabs.

Ingredients

Sheet Pan Beef Kebabs:

• 1 lb ground beef (I use 85/15), or ground meat of choice

• 1 onion

• 1 red bell pepper

• 1 bunch parsley

• 3 garlic cloves

• 3 tsp paprika in oil

• 2 tsp salt

• 1 tsp black pepper

• ¼ cup tomato paste

• 2 tbsp oil

Roasted Vegetables:

Red peppers, Anaheim peppers, optional jalapeños, tomatoes on the vine and quartered onions.

Olive oil and salt!

Fluffy White Rice:

• 2 cups basmati rice, washed and drained

• 3½ cups water (4 cups for softer rice)

• About 3 tbsp olive oil

• 2 tsp salt

Preparation

Directions:

Preheat oven to 425°F. Process onion, bell pepper, parsley and garlic until very finely chopped.

Transfer to a fine mesh strainer and squeeze out as much liquid as possible.

Combine with ground beef, paprika, salt, pepper, tomato paste and oil. Mix well.

Spread evenly on a half sheet pan. Using a knife or bench scraper, cut into strips about 1½ inches wide, then score crosswise to form portions.

Set the elevated rack over the meat and arrange vegetables on top. Drizzle with olive oil and sprinkle with salt.

Bake for 15 minutes, check, then bake about 7 minutes more, until the kebabs are cooked through. Broil up to 5 minutes for extra color, watching closely. If the vegetables finish first, remove the rack and bake the kebabs another 5 minutes as needed.

Some juices in the pan are completely normal! Carefully spoon off excess and reserve for serving.

For the rice, combine all ingredients in a good nonstick pot. Stir and bring to a boil uncovered.

When the water drops to the level of the rice, cover, reduce heat to low and simmer about 10 minutes. Turn off heat and let rest, covered, for 5 minutes, then fluff.

Serve everything on a beautiful platter and watch the family dig in. Leftovers are even better! 🤍
