• Juice of 1 lemon
• 1–2 tsp salt, to taste
• ~¾ cup ice-cold water (as needed)

Step 1: Mix the Base
In a medium bowl, combine the tahini, lemon juice, and salt.
Step 2: Add Water Gradually
Slowly whisk in the ice-cold water, a few tablespoons at a time. The mixture will first thicken, then become smooth and creamy.
Step 3: Adjust Consistency
Continue whisking until you reach your desired texture — add more water for a thinner, pourable sauce or less for a thicker dip.
Step 4: Season to Taste
Taste and adjust with more lemon juice or salt if needed.
To Serve & Store
Serve fresh as a dip, drizzle, or side for appetizers and mains.
Store in an airtight container in the refrigerator for up to 1 week.
Whisk briefly before serving if it thickens after chilling.
