About the Recipe
Move over Matzo Breiāthis is your next go-to Passover breakfast! These bourekas are cheesy, crispy, and so easy to make. My kids wait all year for them, and they saved my life when they were young.

Ingredients
For the Matzah Squares:
ā 4 matzah squares
For the Filling:
ā 1 cup cottage cheese
ā 1 cup sour cream
ā 1 cup crumbled feta cheese
ā 1 cup grated mozzarella cheese
ā 1 cup shredded cheddar cheese
ā 2 large eggs (for filling)
For the Egg Wash:
ā 1 large egg
For Toppings:
ā Everything but the bagel seasoning
ā Sesame seeds (for Kitniyot eaters)
ā Crushed almonds
ā Dehydrated onions
Preparation
Directions:
1. Soften the Matzah:
Wet the matzah squares thoroughly under water and wrap them in a clean kitchen towel. Let sit for 10 minutes to soften. If theyāre not flexible enough, repeat the process.
2. Make the Cheese Filling:
In a bowl, mix the cottage cheese, sour cream, crumbled feta, mozzarella, cheddar, and 2 eggs until well combined.
3. Assemble the Bourekas:
Once the matzah is soft and flexible, cut each sheet into 4 mini squares. Place 1 teaspoon of cheese filling in the center of each square. Fold from corner to corner and press at the tip to form a triangle.
4. Prepare for Baking:
Place the bourekas on a parchment-lined baking sheet. If they rip slightly, donāt worryāthe melted cheese will bond them together as they bake. Brush each bureka with beaten egg and sprinkle with your chosen topping.
5. Bake:
Preheat the oven to 350°F (175°C) and bake for 25 minutes, or until golden brown.
6. Serve & Enjoy:
Enjoy with grated tomato drizzled with olive oil and a sprinkle of salt. For extra flavor, try stuffing them with hard-boiled egg or avocado. If using crushed almonds as a topping, a drizzle of honey is delicious too! Chag Pesach Kasher VeSameach!
