Magical One-Pan Boneless Chicken

The ultimate showstopper for your holiday table!

Yes, a whole chicken with NO bones! Ask your butcher to debone it for you, then stuff it with the most incredible herby dill, fava bean & basmati rice.

Underneath it all? Layers of golden potatoes soaking up every single drop of those delicious chicken juices. The rice surrounds the chicken, the chicken is stuffed with even more rice, and everything cooks together in ONE pan. And because the chicken is boneless, you can simply slice right through it and serve.

Ingredients

Chicken:

• 1 whole chicken, about 3½ lbs, deboned*

• 3 tbsp olive oil

• 2 tsp salt

• 1 tsp black pepper

• 2 tsp paprika

• 1 tsp turmeric


(Ask your butcher to debone a whole chicken. Yes, it’s possible! You can also make this with a bone in chicken.)


Fava Bean & Dill Rice:

• 2 cups raw basmati rice

• ¼ cup oil

• 3 tsp salt

• 2 bunches fresh dill, finely chopped

• 14 oz (about 2 cups) frozen double peeled fava beans, thawed

• 6 to 8 garlic cloves, minced


+Plus:

• 4 Yukon Gold potatoes, peeled & sliced ⅓ inch thick

• ½ cup water

• Large roasting pan (mine is 16”)

Preparation

Directions:


Preheat oven to 375°F / 190°C.


Rub chicken inside and out with olive oil and all seasonings. Set aside.


Bring a large pot of water to a boil. Rinse basmati rice well, add to boiling water and cook for exactly 7 minutes. Drain into a fine mesh strainer and rinse with cold water to stop the cooking.


In a large bowl, combine parboiled rice, dill, fava beans, garlic, oil and salt. Toss well.


Layer sliced potatoes across the bottom of your roasting pan. Place chicken on top and generously stuff the cavity with the rice mixture. Spread remaining rice all around the chicken, covering the potatoes.


Pour ½ cup water over the rice. Cover first with parchment paper, then tightly with foil.


Bake for 2 hours. Uncover and bake another 30 minutes until beautifully golden. For extra color and crispiness, broil an additional 5 to 7 minutes.


Remove from the oven, slice right through that beautiful boneless chicken and ENJOY!
