FINALLY!! The Mafroom Recipe you’ve all been waiting for is HERE!

A traditional Libyan Jewish dish of potatoes stuffed with seasoned meat, lightly fried, and simmered in a delicious tomato sauce. Every bite is SO good! Trust me, this one is worth the wait!

Ingredients

Potatoes:

7 medium Yukon Gold potatoes, peeled


Meat Filling:

1 lb ground beef (or ground meat of choice)

1 onion, finely chopped

1 bunch parsley, finely chopped

1 carrot, grated

3 tbsp olive oil

1 tbsp paprika

1 tsp salt

1 tsp black pepper

½ tsp cumin


Vegetarian option:

Substitute ground tofu or Beyond Meat.


Batter & Frying:

4 large eggs

1 tbsp tomato paste

2 tsp paprika

½ tsp salt

½ tsp black pepper

2 cups cornstarch or all-purpose flour

1 cup neutral oil for frying (avocado or canola)


Tomato Sauce:

3 tbsp olive oil

1 onion, finely chopped

4 celery ribs, finely chopped

2 carrots, finely chopped

1 tbsp paprika

2 tsp salt

1 tsp black pepper

1 tsp cumin

½ cup tomato paste

4 cups water

Preparation

Prepare the filling:

Combine all meat filling ingredients in a large bowl. Mix well.


Prepare the Mafroom:

Slice potatoes lengthwise into ¼-inch slices. Sandwich an even layer of meat between two matching potato slices, pressing gently to hold them together. Repeat with remaining potatoes and filling.


Coat:

Whisk eggs, tomato paste, and spices. Dip each mafroom into the egg mixture, then coat completely in cornstarch. Use one hand for wet and one for dry!


Fry:

Heat oil in a large skillet. Fry mafroom for 5 to 7 minutes per side until golden. Transfer to a wire rack.


Prepare the sauce:

In a wide, shallow pot, sauté onion, celery, and carrots in olive oil for about 7 minutes. Add spices, tomato paste, and water. Mix well and bring to a gentle boil.


Simmer:

Arrange mafroom upright in the sauce, side by side in a circular pattern, keeping them in a single layer. Cover, reduce heat to low, and simmer for 30 to 45 minutes until the potatoes are tender and the meat is fully cooked.


TIP:

To check if your Mafroom is ready, insert a fork into the potato. It should slide through easily without the potato falling apart!
