A quick and easy alternative to the traditional Matboucha, this version skips the time-consuming task of peeling tomatoes while still delivering the rich, spicy, and flavorful dip that’s perfect for Shabbat or any occasion!

- 7-8 whole garlic cloves, minced

- 3-4 Serrano chilies, thinly sliced

- ½ cup olive oil or your preferred cooking oil

- 800g crushed tomatoes (from a jar or can)

- 800g diced tomatoes (from a jar or can)

- 2 heaping tablespoons paprika

- 1 tablespoon salt (adjust to taste)

- 1 tablespoon sugar (for balance)

1. Heat the oil: In a large pot, heat the oil over medium heat.

2. Sauté garlic and chilies: Add the minced garlic and sliced Serrano chilies. Stir for about 3 minutes until fragrant.

3. Add tomatoes and seasonings: Pour in the crushed and diced tomatoes. Then, add the paprika, salt, and sugar. Stir to combine.

4. Simmer: Cover the pot and let it simmer over medium heat for 30 minutes, stirring occasionally.

5. Serve: Serve warm or at room temperature with bread, challah, or as a flavorful dip.
