A super delicious salad that only gets better the next day — and the day after that.

Ingredients
Ingredients:
6–7 celery ribs, sliced into small pieces
8 garlic cloves, minced
1 bunch fresh mint, chopped
1 Serrano chili, finely chopped (optional)
Dressing:
Juice of 2 large lemons
1–2 tsp salt
3 tbsp olive oil
Preparation
Directions:
Chop the celery, garlic, mint, and chili (if using). Place in a large bowl.
In a small bowl, whisk together lemon juice, salt, and olive oil.
Pour dressing over the vegetables and toss well to coat.
