A super delicious salad that only gets better the next day — and the day after that.

Ingredients

Ingredients:

  • 6–7 celery ribs, sliced into small pieces

  • 8 garlic cloves, minced

  • 1 bunch fresh mint, chopped

  • 1 Serrano chili, finely chopped (optional)


Dressing:

  • Juice of 2 large lemons

  • 1–2 tsp salt

  • 3 tbsp olive oil

Preparation

Directions:

  1. Chop the celery, garlic, mint, and chili (if using). Place in a large bowl.

  2. In a small bowl, whisk together lemon juice, salt, and olive oil.

  3. Pour dressing over the vegetables and toss well to coat.

  4. Serve fresh.
