The fennel salad that’ll win you over. Crisp, refreshing, and totally irresistible — you won’t be able to put your fork down!

Ingredients
For the salad:
1 large fennel bulb (or 2 smaller ones), fronds removed
3 celery ribs
1–2 jalapeños (trust me, don’t skip!)
1 Honeycrisp apple
About 4 green onions, scallion top only (green part)
Handful of toasted slivered almonds
For the dressing:
1/3 cup apple cider vinegar
1/3 cup fresh lemon juice
1/3 cup olive oil
1 heaping tsp kosher salt
1/2 tsp black pepper
1/4 cup honey (or sub maple syrup)
Preparation
Directions:
Using a safe mandolin on setting #2, shave the fennel, celery, and jalapeño into thin slices.
Switch to the julienne setting and run the apple through to create perfect matchsticks.
With kitchen scissors, snip the green parts of the green onions right on top of the salad.
In a jar, combine all dressing ingredients - apple cider vinegar, lemon juice, olive oil, salt, pepper, and honey. Shake it up well until fully combined.
Drizzle the dressing over the salad and toss everything together using tongs until evenly coated.
Top with toasted slivered almonds, give it one more toss, and serve fresh!
Pro tip: Save a little bowl for yourself. The flavors get even better by day two, and that secret stash? Totally worth it.
