About the Recipe

Fresh, zesty, and full of flavor—this corn salad is the perfect bite every time.

Ingredients

  • 2 cans kernel corn, drained

  • 2 small or 1 large red bell pepper, diced

  • ¼ bunch fresh dill, chopped

  • About 4 Israeli pickles in brine (canned), diced

  • 2 heaping tbsp mayonnaise

  • Juice of 1 fresh lemon

  • Salt and pepper, to taste

Preparation

Directions:

  1. Drain the canned corn and place in a large mixing bowl.

  2. Dice the red bell pepper and Israeli pickles into small pieces.

  3. Finely chop the fresh dill.

  4. Add the peppers, pickles, and dill to the corn.

  5. In a small bowl, mix together the mayonnaise and lemon juice.

  6. Pour the dressing over the salad and toss until everything is evenly coated.

  7. Season with salt and pepper to taste.

  8. Chill in the fridge for at least 30 minutes before serving for best flavor.
