Coconut, Banana Cookies with Chocolate

I did NOT come up with this… but whoever did? You’re a genius!
These are hands down one of the most incredible cookies I’ve ever made. I still can’t believe they’re made from just bananas and coconut flakes. That’s it. Soft, chewy, naturally sweet… and that chocolate topping? Don’t skip it. Trust me. Gluten-free, dairy-free, and just perfection!

Ingredients

Ingredients:

• 2 ripe bananas

• 2 cups unsweetened coconut flakes

• Optional: 1 cup semi-sweet non-dairy chocolate chips

• 1 tbsp coconut oil (or any neutral oil)

Preparation

Directions:


  1. Mash the bananas in a bowl. Add the coconut flakes and mix until fully combined.


  1. Line a baking sheet with parchment paper. Scoop spoonfuls of the mixture onto the sheet. Using the back of a spoon, gently flatten and create a small well in the center of each cookie.


  1. Bake in a preheated oven at 350°F for 12–15 minutes.


  1. While they bake, melt the chocolate chips with the coconut oil until smooth.


  1. Once the cookies come out of the oven, spoon the melted chocolate into each center.


  1. Place in the fridge or freezer until the chocolate sets.


I store mine in the freezer and eat them straight from there… they’re honestly perfect that way. These are amazing to make ahead and keep on hand!
