This salad is so irresistible and nutritious all at once! I absolutely adore my new kitchen gadget that effortlessly shreds, slices, and julienne cuts all my vegetables without any risk to my fingers! Amba is a tangy condiment made from white vinegar and spices like fenugreek, cumin, sumac, ginger, turmeric, and mango. While I haven't made it from scratch yet, I often use the sauce or amba powder. You can also find this Amba sauce on my Amazon storefront in the food section.

Ingredients

Ingredients:

- 2 pounds organic carrots (using organic really makes a difference)

- 4 cloves minced garlic

- 1/3 cup amba sauce

- 1/3 cup fresh lemon juice

- 1/3 cup olive oil

- 2 tsp salt

- 2 tbsp paprika or paprika with oil (also available in the food section of my Amazon storefront)

Preparation

Directions:


1. Prepare the Carrots:

   - Peel the carrots and cut each one into thirds.

   - Cut each piece into thin matchsticks.


2. Combine Ingredients:

   - Place the carrot matchsticks in a bowl.


3. Make the Dressing:

   - Add minced garlic, amba sauce, fresh lemon juice, olive oil, salt, and paprika (or paprika with oil) to the bowl with the carrots.


4. Toss the Salad:

   - Toss everything together until the carrots are well coated with the dressing.


5. Marinate:

   - Transfer the dressed carrots to a glass jar for storage.


6. Enjoy:

   - Refrigerate and enjoy the salad for up to 2 weeks.
