Stuffed Cabbages, Baked on a Bed of Apples. Perfect for Rosh Hashanah or any holiday meal!
Ingredients
Ingredients for filling:
- 1 large green cabbage
- 1 lb (450g) ground beef (or your choice of ground meat)
- 1/2 cup raw, washed rice (Basmati or Jasmine)
- 1 small onion, finely chopped
- 1 small tomato, diced
- 1/2 bunch fresh parsley, chopped
- 1/2 bunch fresh dill, chopped
- 2 tsp salt
- 1 tsp black pepper
- 3 large apples (Granny Smith or Honeycrisp), thinly sliced
- Honey drizzle (optional, for extra sweetness)
Ingredients for sauce:
- 1/2 cup oil (divided: 1/4 cup for filling, 1/4 cup for sauce)
- 1 large tomato, grated
- 1/4 cup pomegranate molasses
- 1/4 cup silan (date molasses)
- 1 tsp black pepper
- 2 cups chicken stock
Preparation

1. Prepare the Cabbage Leaves:
- Bring a large pot of water to a boil. Carefully cut around the core of the cabbage to loosen the outer leaves.
- Blanch the whole cabbage in the boiling water for about 5 minutes, until the leaves become pliable.
- Gently peel away the softened leaves, one by one, and set them aside.
2. Soften the Cabbage Stems:
- To make the leaves easier to roll, lay each leaf flat and press down on the thick central stem with your palms. This will soften the stem, making the leaf more pliable for rolling.
3. Make the Filling:
- In a large bowl, mix the ground meat, rice, tomato, onion, fresh herbs, oil, salt, and pepper. Combine thoroughly.
4. Stuff the Cabbage Leaves:
- Place a spoonful of the meat mixture at the base of each cabbage leaf.
- Fold the sides over the filling, then roll the leaf tightly, starting from the base and rolling toward the top.
5. Prepare the Apple Bed:
- Preheat your oven to 350°F (175°C).
- Drizzle olive oil into the bottom of a large oven-safe pot or baking dish.
- Layer the apple slices evenly across the base, covering the entire surface.
- Drizzle honey over the apples for extra sweetness (optional).
6. Assemble and Bake:
- Arrange the stuffed cabbage rolls seam-side down on top of the apple slices.
- In a bowl, combine all the sauce ingredients and mix well. Pour the sauce evenly over the cabbage rolls.
- Cover the pot with a lid or foil and bake for 1.5 to 2 hours, or until the cabbage is tender and the flavors have melded.
- For a golden finish, uncover the pot during the last 30 minutes of baking. You can also broil the dish for 5-7 minutes to achieve a crispier texture.
7. Serve:
- Let the stuffed cabbages rest for a few minutes before serving. The apples will be soft and melted into the dish, adding a delicious and unique flavor.
