I'm forever changed! I never expected this chuck roast to turn out so tender and flavorful. It's the easiest roast to prepare — no more babysitting your meat! I used a gorgeous, marbleized 3-pound chuck roast for this recipe, but you can choose any cut of meat you prefer. Don't overlook the red wine vinegar; it's key to making the meat incredibly soft and tender.

- 3 lb. Chuck roast
- 1 tbsp. kosher salt
- 1 tsp. black pepper
- 1 tsp. paprika
- 1 tsp. allspice
- Drizzle of olive oil
- Drizzle of honey (can be substituted with maple syrup)
- 1/4 cup red wine vinegar
- 1 sprig of rosemary
- 1 sprig of thyme
Preparation
Directions:
1. Preheat the Oven:
- Preheat the oven to 375°F (190°C).
2. Prepare the Chuck Roast:
- Wash and pat dry the chuck roast.
3. Prepare the Dish:
- Place the chuck roast in an ovenproof dish.
4. Season and Dress the Roast:
- Season the chuck roast with kosher salt, black pepper, paprika, allspice.
- Drizzle with olive oil and honey (or maple syrup).
- Pour red wine vinegar over the roast.
5. Massage the Meat:
- Massage the seasonings and ingredients into the chuck roast, ensuring it's coated on all sides.
6. Add Herbs:
- Place a sprig of rosemary and a sprig of thyme on top of the roast.
7. Cover and Bake:
- Cover the dish tightly with parchment paper and then aluminum foil to prevent toxins from the foil from affecting the food.
8. Bake:
- Bake in the preheated oven for 3 and a half hours.
9. Uncover and Baste:
- Uncover the dish, baste the roast with the pan juices, and return it to the oven.
10. Finish Baking:
- Bake uncovered for an additional 30 minutes, allowing the roast to brown and develop flavor.
11. Serve:
- Remove from the oven, pull apart the tender chuck roast, and enjoy!
