This dish is the perfect Shabbat meal, combining juicy, flavorful chicken with spice-infused riceāall cooked together in one pot for maximum flavor.

Ingredients
Chicken Rub Ingredients:
- 1 whole chicken
- Olive oil (drizzle)
- 1 tsp turmeric powder
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 tsp salt
- 1 small lemon, scored (to place inside the chicken cavity)
Rice Ingredients:
- 3 cups basmati rice, washed and strained
- 2 carrots, grated
- 1 large onion, chopped
- Juice of 1 lemon
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp turmeric powder
- 2 tsp curry powder
- Ā¼ cup oil
- 3 cups chicken stock (or 3 cups hot water with ā cup consommĆ©)
Preparation
Directions:
1. Prepare the Chicken:
- Preheat your oven to 350Ā°F (175Ā°C).
- Wash and pat dry the whole chicken.
- Place the chicken in a 4-quart cast-iron brazier or an oven-safe baking dish.
- Drizzle olive oil over the chicken and rub the spices evenly, coating the entire chicken, inside and out.
- Take the scored lemon and place it inside the cavity of the chicken.
2. Prepare the Rice:
- In a separate bowl, combine the washed basmati rice, chopped onion, grated carrots, lemon juice, and all the seasonings. Toss well to combine.
- Spread the rice mixture around the chicken in the pot.
3. Cook the Dish:
- Pour the chicken stock (or consommƩ mixture) evenly over the rice.
- Cover the pot and bake for 2 hours at 350Ā°F (175Ā°C).
- After 2 hours, uncover the dish and bake for an additional 30 minutes to allow the chicken to brown and the rice to develop a crisp top layer.
4. Serve & Enjoy:
- Remove from the oven, let it rest for a few minutes, and serve warm.
- The chicken will be juicy and tender, and the rice will be richly flavored with a beautiful golden color.
