These latkes are perfectly fluffy, golden, and light—not dense—thanks to a secret ingredient: self-rising flour. Don’t have any on hand? No problem! Just swap it for all-purpose flour mixed with 1 teaspoon of baking powder. For the best texture and flavor, use golden potatoes.

- 4 large golden potatoes, peeled  

- 3 small white onions, peeled  

- 3 large eggs  

- 3 tablespoons self-rising flour (or 1 tsp baking powder + 3 tbsp all-purpose flour)  

- 2 teaspoons salt (adjust to taste)  

- 1 teaspoon black pepper  

- Oil for frying  

- Sour cream or your favorite dipping sauce for serving

1. Prepare the Onions:  

   - Grate the onions using a food processor or hand grater.  

   - Squeeze out the excess liquid and transfer the onions to a large bowl.  


2. Grate the Potatoes:  

   - Grate the potatoes and add them directly to the bowl with the onions.  

   - Do not strain the potatoes; their starchy water is key to fluffy latkes.  


3. Mix the Batter:  

   - Add the eggs, self-rising flour, salt, and pepper to the bowl.  

   - Stir thoroughly to ensure the starch from the potatoes is evenly incorporated.  


4. Fry the Latkes:  

   - Heat a generous amount of oil in a large skillet over medium-high heat.  

   - Scoop spoonfuls of the batter into the hot oil, flattening slightly with the back of a spoon.  

   - Fry until golden brown on one side, then flip and fry the other side until crisp and cooked through.  


5. Drain and Serve:  

   - Remove the latkes from the skillet and place them on a paper towel-lined plate to drain excess oil.  

   - Serve hot with sour cream or your favorite dipping sauce.
