About the Recipe

This incredibly moist and flavorful cake is the perfect treat for winter cravings, and it's completely dairy-free! Simple to make in just one bowl, it’s made with fresh orange juice and coconut, giving it a light and delightful texture. If you have allergies, feel free to skip the coconut. For the best results, use freshly squeezed orange juice and Osem or Jell-O brand vanilla pudding mix.

For the Cake:  

• 4 eggs, at room temperature  

• ¾ cup granulated sugar  

• 1 cup neutral oil (grapeseed, avocado, or canola)  

• 1 cup fresh orange juice  

• 1½ cups all-purpose flour (such as King Arthur)  

• 1 full package (80g) vanilla instant pudding mix (Osem or Jell-O brand)  

• 1 tbsp baking powder  

• ½ cup finely shredded coconut (optional)  

• Zest of 1 orange  


For the Orange Icing:  

• 2 cups powdered sugar  

• 4 tbsp orange juice  

• Optional: Extra orange zest for garnish  


Alternatively, you can simply dust the cake with powdered sugar instead of using the orange icing.

Preparation

Directions:


1. Prepare the Batter  

   ◦ In a large bowl, whisk the eggs while gradually adding the sugar.  

   ◦ Whisk for 3-5 minutes until the mixture is light and fluffy.  

   ◦ Slowly add the oil and orange juice, whisking continuously.


2. Combine Dry Ingredients  

   ◦ Sift the flour, vanilla pudding mix (dry, do not prepare it), and baking powder directly into the bowl.  

   ◦ Whisk until just combined.  

   ◦ Fold in the shredded coconut (if using) and orange zest.  

   ◦ Mix until smooth, ensuring there are no lumps.


3. Bake the Cake  

   ◦ Preheat your oven to 350°F (175°C).  

   ◦ Generously spray a Bundt pan with nonstick spray.  

   ◦ Pour the batter into the pan and tap it twice to release any air pockets.  

   ◦ Bake for 35-38 minutes, or until a toothpick inserted into the center comes out clean.


4. Cool & Ice the Cake  

   ◦ Allow the cake to cool completely before icing.  

   ◦ In a bowl, whisk together powdered sugar and orange juice until smooth.  

   ◦ Drizzle the icing evenly over the cooled cake.  

   ◦ Garnish with extra orange zest for added flavor.
