Ingredients
Ingredients:
- 7-9 chicken pieces, skin on preferably
- 3-4 golden potatoes, peeled and cubed
- 3-4 sweet potatoes, peeled and cubed
- 1 onion, sliced
- 1 red pepper, sliced
- 1/2 cup sweet chili sauce (note: it doesn’t make this dish spicy)
Rub:
- 3 tsp salt
- 2 tsp paprika
- 2 tsp onion powder
- 1 tsp black pepper
- 1 tsp turmeric powder
- 3 minced garlic cloves
- 1/3 cup oil

Preparation
Directions:
1. Preheat the Oven:
   - Preheat your oven to 375°F (190°C).
   - Place the chicken pieces in a large ovenproof baking dish.
2. Prepare the Chicken Rub:
   - In a large bowl, combine all the spices, minced garlic, and oil for the rub. Mix well.
3. Season the Chicken:
   - Spread the rub on top of each chicken piece, ensuring it's massaged into the chicken and underneath the skin. Set the bowl aside without washing it.
4. Prepare the Vegetables:
   - Peel and cut the golden and sweet potatoes into chunks.
   - Slice the onion and red pepper.
   - Place the potatoes, onion, and red pepper into the bowl with the remaining chicken rub. Add 1/2 cup sweet chili sauce and toss to coat evenly.
5. Assemble the Dish:
   - Arrange the coated vegetables on top of and around the chicken pieces in the baking dish.
   - Cover the dish with a piece of parchment paper, then cover with aluminum foil to prevent the foil from contaminating the food.
6. Bake:
   - Bake in the preheated oven for about 2 hours, until the chicken is cooked through and the vegetables are tender.
   - Remove the parchment paper and foil, then broil for an additional 10 minutes to brown the top of the dish.
7. Serve:
   - Carefully remove from the oven.
   - Serve your delicious baked chicken with vegetables and sweet chili sauce.
