Let the oven do all the work with this effortless and flavorful chuck roast recipe. Perfect for busy days, this dish is tender, juicy, and even better as leftovers—great for steak tacos!

Ingredients:

- 3 lbs chuck roast (or preferred cut of meat)  

- 1 tsp black pepper  

- 1 tsp salt  

- 1 tsp onion powder  

- 1 tsp garlic powder  

- 1 tsp allspice  

- 1 tsp paprika  

- ¼ cup red wine vinegar  

- 1 tsp Dijon mustard  

- Drizzle of honey  

- Fresh herbs (such as rosemary, sage, and thyme)  

Preparation

Directions:


1. Prep the Meat  

- Preheat the oven to 320°F (160°C).  

- Wash and pat dry the chuck roast, then place it in a baking dish.  


2. Season the Roast  

- Sprinkle all the spices evenly over the meat.  

- Add the red wine vinegar and a drizzle of honey.  

- Massage the seasonings, honey, and vinegar into the roast, ensuring it's fully coated.  


3. Bake Low & Slow  

- Garnish the roast with fresh rosemary, sage, and thyme.  

- Cover with parchment paper first, then seal with foil (to prevent direct contact with the foil).  

- Place in the preheated oven and bake for 3 hours.  


4. Optional Final Browning  

- If desired, uncover the roast and bake for an additional 20 minutes for a slightly caramelized finish.  


5. Serve  

- Let the roast rest for a few minutes.  

- Pull it apart into chunks for a rustic-style serving or slice it once slightly cooled.
